Ingredients
- 1 egg
- 1 sweet potato (shredded)
- 200 gr rolled oats
- 130 gr wheat flour (whole)
- 80 ml honey
- 80 gr nonfat dry milk powder
- 75 gr butter
- 75 gr brown sugar
- 45 gr nuts (chopped)
- 24 gr wheat germ
- 20 gr coconut (grated)
- 5 gr baking powder
- 2 gr salt
- 2 gr lemon rind (grated)
- 1 gr cinnamon
- 1 gr nutmeg
- 1 gr baking soda
Preheat oven to 375 degrees. Cream butter, sugar and honey together in bowl; beat in egg. Stir flour, dry milk, baking powder, baking soda, salt, cinnamon, nutmeg and wheat germ together in a separate bowl. Add to egg mixture and beat well. Stir in sweet potato, lemon rind, coconut, oats and nuts; mix well. Drop dough by teaspoons onto greased cookie sheet. Bake for 10 to dozen minutes. Remove from cookie sheet and cool on rack. ----
