- 2 garlic (cloves)
- 2 green peppers
- 2 onions
- 1 eggplant
- 1/4 checkered tablecloth italian
- 1 tb olive oil (hot)
- 1 tb garlic powder
- 1 tb thyme
- 1 tb oregano
- 1 1/2 ts pepper (red)
- 1 tb rosemary
- 1 1/2 tb basil
- 2 tb parsley (chopped)
- 1/2 tb sage
- 1/2 tb marjoram
- some pepper to
-Blend Checkered Tablecloth Italian Blend Saute eggplant in olive oil; add and saute onions, peppers, and garlic. When vegetables begin to soften, add zucchini and tomatoes. Add all remaining ingredients, including Checkered Tablecloth Italian Blend. Cover and simmer 25 minutes; remove cover and simmer 10 minutes more to reduce liquid.
