Ingredients
- 1 clove garlic
- 4 c spaghetti squash (cooked)
- 6 oz artichoke hearts (marinated)
- 5/8 c sweet pepper (chopped red)
- 4 oz mozzarella cheese (shredded)
- 2 tb wine vinegar (red)
- 1/4 c rice vinegar
- 2 tb vegetable oil
- 1 tb dry mustard
- 2 tb parmesan cheese (grated)
- 1 tb capers
- 1 tb onion (finely chopped)
- 1 tb oregano (chopped fresh)
- 1 ts dry wine (white)
- 1 tb basil (chopped fresh)
- 1 tb parsley (chopped fresh)
- 1 slice zucchini
- 1 slice carrot
Drain artichokes, reserving marinade, coarsely chop artichokes Combine artichokes, spaghetti squash, and next 5 ingredients in a large bowl, set aside. Combine reserved marinade, rice vinegar, and remaining ingredients in a jar. Cover tightly, and shake vigorously. Pour over vegetables. Cover and chill 8 hours.
