Ingredients

- 2 eggs (beaten)
- 1 lime rind (grated)
- 1 icing sugar for dusting
- 1/2 sachet yeast (dried)
- 225 ml hand water approx (hot)
- 450 g redcurrants stalks removed
- 350 g strong bread flour
- 175 g almonds (ground)
- 5 tbsp single cream
- 3 tbsp caster sugar
- 15 g butter
- 2 tsp caster sugar
- 1 tsp cinnamon (ground)
- 1/2 tsp vanilla essence
To freeze: wrap in foil and freeze for up to 2 months.
