- 1 sprig thyme
- 1/4 port
- 1/4 shallots (minced)
- 3 c beef stock
- 1 c olive oil
- 1/2 c carrot
- 1/2 c onion
- 1/2 c celery
- 3 tb sherry wine vinegar
- 2 tb currant jelly (red)
- 2 tb butter
- 2 tb clarified butter
- some garlic
- some salt and pepper
- some black pepper
