Ingredients
- 1 onion
- 1 clove garlic
- 1/4 savory (dried)
- 1 lb chicken livers
- 6 oz tomato paste
- 3/4 c dry sherry
- 3/4 c chicken stock
- 1/4 lb mushrooms
- 1/4 c parsley (chopped)
- 1 tb butter
- 1 tb olive oil
- 1/2 ts oregano (dried)
- 1/2 ts basil (dried)
- 3 slices bacon (sliced)
- 1/2 slices wide
and serve hot over rice, polenta or pasta. (Editorial note: After trying all three, I very much prefer rice with this dish.) Serves 4.
