Ingredients
- 15 pizza pans
- 3 green onions
- 2 juicy tomatoes
- 1/2 at a time until the dough becomes too to whisk (thick)
- 1,400 ml water
- 950 gr durum flour
- 120 ml warm water
- 95 gr durum flour biga
- 90 ml olive oil
- 9 gr capers
- 8 gr salt
- 7 gr oregano
- 7 gr salt
- 2 gr yeast (dried)
- 1 package rim on dough base
VARIATION: Shape dough into 3 rounds & place on oiled baking sheets sprinkled with cornmeal. Cover & let rise for 2 hours. Bake at 230ÂșC until hollwo when tapped. Makes 3 loaves.
