Ingredients
- 2 celery stalks
- 2 garlic (cloves)
- 1 onion
- 1 bay leaf
- 1,400 ml water
- 350 ml tomato juice
- 300 gr tomatoes (whole peeled)
- 260 gr am adzuki beans (cooked)
- 260 gr am kidney beans (cooked)
- 260 gr am garbanzo beans (cooked)
- 100 gr am pearled barley
- 60 ml wine (red)
- 30 ml tamari soy sauce
- 30 ml unrefined olive oil
- 16 gr spinach
- 14 gr parsley
- 10 gr parmesan cheese
- 2 gr oregano
- 1 slice carrot
Salt to taste Saute onion, parsley, spinach, garlic and herbs in olive oil until tender. Mix all ingredients except wine, soy sauce, and parmesan cheese. Simmer covered for 1 hour. Stir in wine, soy sauce and Parmesan cheese before serving.
