Squid With Saffron Sauce

Ingredients

  • 8 squid
  • 2 onion
  • 2 garlic clove
  • 2 egg yolks
  • 1 bay leaf
  • 1 with a toothpick
  • 240 ml dry wine (white)
  • 110 gr smoked ham
  • 40 gr parmesan chee (freshly grated)
  • 5 ml extra-virgin olive oil
  • 5 ml olive oil
  • 5 gr italian parsley leav (chopped)
  • 2 gr thyme (dried)
  • 1 gr parsley leaves (chopped)
  • 1 gr crumbled saffron threads
  • some pepper to tas

seasoning and baste frequently. Remove the bay leaf, sprinkle the squid with the parsley, and serve.
