Basque Style Eggplant Casserole

• 6 tomatoes (peeled)
• 5 mushrooms (sliced)
• 2 eggs with (beaten)
• 1 eggplant
• 120 gr swiss cheese (grated)
• 90 ml oil
• 40 gr parmesan cheese (freshly grated)
• 16 ml water
• 8 gr fines herbs
• 1 gr salt

Pesto Pasta

• 2 eggs with (lightly beaten)
• 2 garlic (cloves)
• 375 gr unbleached all-purpose flour
• 120 gr feta cheese crumbled
• 120 ml extra-virgin olive oil
• 65 gr basil leaves packed (fresh)
• 60 ml pesto sauce
• 30 gr walnuts (chopped)
