- 8 round cake pans
- 4 eggs
- 3 egg yolks
- 1 1/4 frosting
- 3/8 egg whites
- 2 1/2 c sugar
- 2 1/2 c cake flour
- 2 c pecans (chopped)
- 1 c evaporated milk
- 1 c buttermilk
- 3/4 lb butter (unsalted)
- 2 c unsweetened coconut (shredded)
- 4 oz chocolate (white)
- 1/2 c boiling water
- 2 ts vanilla extract
- 1 ts baking soda
evenly over the cake layer, making sure to spread it all the way to the edges. Top with the second layer, and spread with 1/4 of the frosting. Top with the third cake layer. Evenly frost the top and sides of the cake with the remaining frosting.
