Ingredients
- 5 garlic (cloves peeled)
- 3 chicken breast
- 2 cans stewed ripe tomatoes extra rotel (red hot)
- 2 cans chicken broth fat free
- 1 zucchini squash cubed
- 1 squash cubed (yellow)
- 2 c water if needed
- 1 c baby carrots (whole)
- 1 tbsp fat-free sour cream
- 1 tbsp fat-free cheddar cheese (grated)
- 1 tbsp tortilla chips (crushed)
- 3 slices stalks celery (sliced)
- 1 package green beans
- 1 package green chiles (chopped)
- 1 package garbanzo beans (drained)
- 1 package corn (drained)
- 1 package black beans
Put all ingredients into crock pot. Turn on low (or auto) and leave all day. Come home to a hot bowl of soup. I serve it over some low fat cheese and add some crumbled WOW chips (fat free). Also a dollop of fat free sour cream is great and cuts the heat if it's too hot for you. Warning if you use the extra hot Rotel, it will be SPICY!
