- 3 carrots in (cut)
- 3 stalks celery in (cut)
- 2 garlic (cloves finely minced)
- 2 zucchini in (cut)
- 1 soak the navy beans overnight
- 1 romano cheese (grated)
- 1 onion coarsely (chopped)
- 1 leek thinly (sliced)
- 700 ml water (cold)
- 525 gr green beans
- 475 ml boiling water
- 700 ml vegetable stock
- 400 ml italian tomatoes with juice (plum)
- 270 gr cabbage cored (shredded)
- 240 ml boiling water
- 150 gr navy (dried)
- 120 gr basil
- 80 gr parmesan cheese (grated)
- 55 gr orzo
- 30 ml olive oil
- 26 gr tightly packed basil (minced fresh)
- 2 gr thyme (dried)
- some black pepper
Author's note: For a friend of mine, a superb minestrone always contains one s ecret ingredient: a tablespoon of sugar to enhance all of the flavors. She may be right.
