Ingredients
- 6 flour tortillas
- 2 jalapenos
- 2 cilantro
- 110 gr healthy favorites low-fat -mild cheddar
- 80 gr tomatoes (plum)
- 65 gr tomatillos
- 60 gr onion (thin red wedges)
- 16 ml lime juice
- 8 gr chili powder
- 2 ml pepper sauce (hot)
- 1 gr cumin (ground)
- 1 gr salt
- 2 slices chicken breast (halves)
- some garlic
Heat oven to 190ºC Place tortillas on cookie sheet. Bake 5 minutes or until lightly toasted. In small bowl, mix tomatillos, tomatoes, jalapenos, cilantro, juice, garlic, pepper sauce, cumin and salt. Stir in 1 cup cheese. Mix chicken with chili powder, tossing to coat. Spray skillet with Pam. Cook chicken until tender. For each pizza, spreac half cup tomato mixture on 1 tortilla. Top with chicken, onion wedges and quarter cup remaining cheese. Bake 10 to dozen minutes or until cheese is melted.
