Ingredients
- 725 degree oven
- 2 lb potatoes (red new)
- 1/2 c low fat yogurt (plain)
- 1/2 c mayonnaise (light)
- 3/8 c skinned peanuts (red)
- 3/8 c onion (minced red)
- 1 tb grainy mustard
- 1 tb dijon mustard
- 1 tb olive oil
- 1 tb rice vinegar
- 2 tb cilantro (finely chopped)
- 1/2 ts cumin (ground)
- 1/8 ts salt
- 2 slices ribs celery
- 1 slice carrot
bowl. Stir together the mayonnaise, yogurt, cilantro, mustards, cumin and several grindings black pepper. Combine with the vegetables and refrigerate. Stir in the peanuts just before serving.
