Ingredients
- 350 degree oven about
- 6 romaine leaves
- 6 radicchio leaves
- 3 times
- 3 sprays
- 2 stalks celery
- 1 lemon (finely grated)
- 1 lb chicken breasts
- 1/2 c nonfat yogurt (plain)
- 3/8 c mayonnaise (light)
- 3/8 c golden raisins
- 2 tb lemon juice
- 2 ts honey
- 2 ts dijon-style country mustard
- 2 ts lemon juice
- 2 teaspoons lemon juice
- 1 ts olive oil
- 1 tb rosemary leaves (minced fresh)
- 1/8 ts salt
teaspoon olive oil. Tear the lettuce into small pieces and toss with the lemon-oil mixture. Divide between plates and top with the chicken salad. Garnish with the croutons. Note: If radicchio is unavailable or too expensive, substitute red leaf lettuce.
