Ingredients

- 5 cake (pan)
- 1 orange
- 1 apple
- 3 c day old bread (whole grain)
- 1 3/8 c water
- 7/8 c maple syrup
- 1 1/2 c packed carrots (grated)
- 3/4 c soy milk
- 1/2 c apricots (dried)
- 1/2 c pineapple juice (frozen)
- 3/4 c raisins
- 1/2 c cashews (raw)
- 3/8 c walnuts (ground)
- 1/4 c cornstarch
- 2 ts slivered ginger (fresh)
- 2 ts ginger (freshly grated)
- 2 ts cinnamon
- 1 ts vanilla
- 1/2 ts baking powder
- 1/4 ts nutmeg
light syrup forms. CREME: Puree all ingredients in a blender till creamy, smooth & white. TO ASSEMBLE: Pour about 1/4 c compoteover a serving of pudding: top with a dollop of creme.
