  • 400 gr sugar
  • 325 gr all purpose flour
  • 240 ml buttermilk
  • 170 gr firmly packed dk brown sugar
  • 130 gr butter (unsalted)
  • 110 gr unsulfured
  • 80 gr strong brewed coffee
  • 60 ml lemon juice (fresh)
  • 60 gr ginger (finely chopped peeled fresh)
  • 32 gr sugar in bowl
  • 26 gr powdered sugar
  • 6 gr baking soda
  • 6 gr sugar
  • 5 gr cinnamon (ground)
  • 5 gr ginger (ground)
  • 4 gr dry mustard powder
  • 2 gr vanilla extract
  • 1 gr ginger (ground)

Spoon some syrup over each pear. Spoon dollop of whipped cream alongside.
