- 3 poultry stock
- 2 okra (sliced fresh)
- 1 when (very hot)
- 1 lard in a soup pot
- 1 cayenne
- 1 black pepper
- 1 salt
- 1 lard
- 5 c rice (hot cooked)
- 1 lb andouille sausage
- 2 c onion (chopped)
- 1 1/2 c all purpose flour
- 1 c green pepper (chopped)
- 1 c green onions (sliced)
- 1 c celery (chopped)
- 1/2 c flat-leaf parsley (minced)
- 1 1/2 ts garlic (minced)
- 1 ts pepper (white)
- 1/2 ts garlic powder
- 1/2 ts salt
- 1/2 ts black pepper
- 1/2 ts paprika
- 1/2 ts onion powder
oothpicks. Arrange roulades in square microwavable dish, 8 x 8 x 2 inches. Cover with waxed paper and microwave on high 7 to 9 minutes, rotating dish 1/2 turn after 3 minutes, until chicken is done. Let stand covered 3 minutes. Prepare Hollandaise Sauce; serve with chicken. Garnish with dill weed if desired. 4 servings From the files of Al Rice, North Pole Alaska. Feb 1994
