Ingredients

  • 6 corn tortillas (white)
  • 2 baking dish coated with cooking spray
  • 2 jalapeno pepper
  • 3/8 seafood mixture across center of tortilla
  • 4 1/2 c water
  • 4 cups water to a in a saucepan (boil)
  • 1 lb unpeeled shrimp (fresh)
  • 1 c low-fat sour cream
  • 3/4 cup sauce in bottom
  • 10 1/2 oz low-sodium
  • 1/2 lb lump crabmeat (fresh)
  • 1 c nonfat cottage cheese
  • 1/2 cup water
  • 4 1/2 oz green (chopped)
  • 1/2 c fat monterey jack cheese (shredded reduced)
  • 1/2 cup onion (chopped)
  • 1/4 c calorie margarine (reduced)
  • 1/4 cup no salt added tomato juice
  • 1/4 c all purpose flour
  • 2 tablespoons cilantro (chopped fresh)
  • 1/8 ts salt
  • 1/8 teaspoon salt

combine all ingredients in a small bowl, stirring well. yield : 1 1/2 cups. ----
