- 2 gr nutmeg (freshly grated)
Sweet Mango Chutney
- 225 mangoes
- 2 garlic (cloves)
- 2 cardamoms
- 1/2 chilli powder
- 1/2 sugar
- 85 gr sugar
- 75 ml vinegar
- 22 gr sultanas
- 10 ml mustard seeds
- 1 gr salt

- 240 gr coriander seeds
- 140 gr peppercorns
- 95 gr cumin seeds

- 2 gr nutmeg (grated)
Vindaloo
- 6 black peppercorns
- 5 cardamoms
- 4 garlic (cloves)
- 3 times during that time
- 2 cm cinnamon stick
- 1/2 chilli powder
- 525 gr pork (lean)
- 150 ml water
- 75 ml oil
- 50 ml vinegar
