  • 1 bell pepper as above (yellow)
  • 1 prepare grill
  • 1 garlic clove
  • 1 bay leaf
  • 1 bottle dark mexican beer
  • 1 smoked ham hock
  • 1 clove garlic
  • 1 jalapeno (chopped)
  • 1 spoon a portion of the drunken black beans in the middle of warm (plate)
  • 1 serrano chili (chopped)
  • 5/8 dice
  • 1/4 smoked bacon in dice
  • 1,900 ml rich chicken stock
  • 500 gr black turtle beans
  • 475 ml rich chicken stock
  • 240 ml rich chicken stock
  • 140 gr veal demi-glace
  • 110 gr corn
  • 75 gr ancho chili paste
  • 65 gr mexican chorizo sausage skin removed
  • 32 gr cornstarch
  • 22 ml olive oil
  • 16 ml oil in a saucepan over hea when (hot)
  • 7 ml oil in a ovenproof saute over hea when (pan hot)
  • 4 gr epazote (chopped finely)
  • 1 gr cumin (ground)
  • 1 gr cracked black peppercorns
  • 1 gr coriander (ground)
  • 1 gr oregano fine (fresh chopped)
  • 1 gr thyme fine (fresh chopped)
  • some smoked tomato ranchero
  • some salt
  • some salt to cotija queso
  • some salt to ancho chile paste

Tart Tomatillo Relish: Mix all ingredients together, then check seasoning.
