- 1 garlic clove
- 1 bay leaf
- 1 bottle dark mexican beer
- 1 smoked ham hock
- 1 clove garlic
- 1 jalapeno (chopped)
- 1 spoon a portion of the drunken black beans in the middle of warm (plate)
- 1 serrano chili (chopped)
- 5/8 dice
- 1/4 smoked bacon in dice
- 1,900 ml rich chicken stock
- 500 gr black turtle beans
- 475 ml rich chicken stock
- 240 ml rich chicken stock
- 140 gr veal demi-glace
- 110 gr corn
- 75 gr ancho chili paste
- 65 gr mexican chorizo sausage skin removed
- 32 gr cornstarch
- 22 ml olive oil
- 16 ml oil in a saucepan over hea when (hot)
- 7 ml oil in a ovenproof saute over hea when (pan hot)
- 4 gr epazote (chopped finely)
- 1 gr cumin (ground)
- 1 gr cracked black peppercorns
- 1 gr coriander (ground)
- 1 gr oregano fine (fresh chopped)
- 1 gr thyme fine (fresh chopped)
- some smoked tomato ranchero
- some salt
- some salt to cotija queso
- some salt to ancho chile paste
